A few weeks ago, I found out that there is a pretty significant chance that I am coeliac - meaning if it is confirmed, I can't eat gluten in any way, shape, or form. As a form of denial, and in a last ditch effort to bake all of the delicious things before I am no longer allowed (doctors orders to keep eating gluten until I get officially tested) I am currently working my way through a myriad of cake recipes. As you'd expect this is great news to my husband, friends, and neighbours who have been copping their fair share of big over-the-top special occasion cakes on with every regular old afternoon cup of tea.
So far I've made this Rose Bundt Cake with Creme Fraiche Icing, this (perfect) Chocolate Cake, and this Chocolate Mousse Tart. Next, I have my eye (and stomach) set on this Strawberry Sponge Cake, Blueberry Lovers Cake, and Triple Layer Strawberry Cake. Hopefully my next obsession will include some kind of high intensity exercise - or I might be getting myself in trouble.
